Adam Uradziński's story
My career in hospitality started in 2006 in my hometown. It was seasonal work as a waiter in the best hotel in my city, a story similar to a lot of students on a summer break. I met wonderful people there who shared their passion for hospitality with me. It was an amazing three years and during this time, I learnt a lot, especially in the food & beverage department. I also acquired knowledge about event organization, VIP service, bar service, wines and much more.
After this, I moved to Gdańsk to continue my studies in tourist services management at Gdynia Maritime Academy and worked as bartender in a restaurant in the old town. After a few months I decided to go back to the hotel industry and I started as a waiter in Novotel Gdańsk Centrum. In fact, April 1, 2009, was my first day in Accor and the beginning of my journey in hospitality and now I am a restaurant Manager in Mercure & ibis Gdańsk Stare Miasto.
Over the years I have worked as a waiter, bartender, shift leader in F&B, deputy F&B manager and in 2016 – a very special year for me – I moved from Novotel to Mercure to start managing the Winestone concept.
Since my first days at Accor, I have met many people – guests, colleagues from across Accor and sommeliers, producers, etc. from other companies and I think that is one of the greatest values of hospitality. Meeting people, sharing knowledge, teaching and learning, it’s like a huge encyclopaedia – if you want to learn something new you just have to find the right person to ask. That is what I always say to youngers when I recommend choosing Accor as an employer – it is about the people and the ability to grow in this business, to build your own strong position and brand.
Hospitality and Accor are an opportunity to show up as a Heartist® – a person with commitment and willingness to help to people. For someone to whom the sky is the limit, with creativity and an open mind nothing is boring or difficult; every day is different.
My huge passion is a wine and I have met a lot of people who share that passion through learning, courses and meeting sommeliers from all over the world. And I travel to meet wine producers; in Germany in the Pfalz wine region, I tried the oldest wine I have ever had, the 1900 vintage Gewürtztraminer Trockenbeerenauslese – I can still taste it!
I have also taken part in some of the best events in the wine / sommelier industry such as the Polish championship of sommeliers; at many of these I was a presenter but I participated as a team member and that was Best Sommelier in the World 2023 in Paris. I had an amazing time with wonderful people and a great atmosphere; I acquired a lot of knowledge and, of course, had great wines and food. That was my ‘World Cup’ and I will never forget it.
Always be open to something new. If you don’t feel so strong in technical things, don’t worry, my colleagues and I are here to help you. I will share my passion with you with pleasure – just show me that you want!
